Betty Lou is a fictional character. The owner, Chef Albert Wijaya, wants a name that will remind people of South American that is famous for its comfort style food. This is the food coming from the barbecue belt in America; Carolina, Texas, Memphis and Kansas City. These places are famous for its authentic American barbecue where the meat is slow smoked for 18 hours, making the meat really tender and juicy. We go to the kitchen and see how the chef unwrapped his meat stock that has been smoked for 18 hours. He prepared the meat in shift, to ensure that the brisket and ribs are always available.
Their signature food is the Texas Style Wagyu Beef Brisket and a huge 1.1kg slab of wood-smoked, US-sourced St. Louis Pork Ribs, slow-smoked for up to 18 hours. The secret is not just in the slow smoke, but in the rub. The chef won’t tell us his secret but it is smoky and sweet and savory and all that flavor melts beautifully with the meat. It’s hard to move on from this meat. You can enjoy this with a selection of side dishes, starting from the garlic-roasted mashed potatoes, mac & cheese, and home cut fries.
