Dishes might include lime leaf, chilli and coconut curry of fern tips and cherry tomatoes and seared mahi-mahi with, baby zucchini, chickpea and mint salad with preserved lemon and sumac dressing.
Overseen by thoroughly innovative Chef Chris Miller, who will prove that healthy eating doesn’t always mean boring and bland. His spa cuisine is flavored with Balinese and Southeast Asian spices and is composed of organic and locally sourced ingredients with plenty of raw fruits and veggies, though meat and fish are also on offer.
Sunday brunch is worth the trek even if you aren’t a guest. The first thing that perhaps will struck you is the sheer variety of dishes, such as gingerbread hot cakes with lemon sauce, and yellowfin tuna tataki with radish, black fungus, ponzu, and fried garlic. Also, there are pretty little local girls practice traditional dance to the sounds of gamelan orchestra nearby under the strict tutelage of Ibu Wayan, a known task master.
