Unoaked 2.01 at SKAI Beach Club

When one hears the word Unoaked, their thoughts would immediately goes to wines. It spesifically refers when a wine is not fermented in oak casts, giving it a purer grape taste. For Padma Resort Legian and its chef, this is a challenge of its own. How can you pair these unoaked wines with traditional Indonesian food?

This end of February, What’s New Bali was invited to the Unoaked 2.01 dinner at SKAI Beach Club to see whether they have answer the question above. Chef Rudy Harrasyid, Theodorus Setyo & Frans Jarot work their magic and create four stunning courses paired with the best wines. Now, we’ve tried Chef Theo’s Alchemy dinner and we love it. However, the fact that all of these dishes are Indonesian food makes it extra special.

We started the night with an interesting Amouse, which is Tahu Berontak. But don’t imagine this dish served as your typical yellow tofu with lots of stuffing inside. This one is a deep fried tempura crushed tofu, served with wok fried vegetables that looks like cheese stiks made like an art piece. This Tofu is paired with Cape Discovery Brut Cuvee that is light and fruity. Then on to the appetizer, which is Lumpia Basah – Home Made Javanese fresh vegetables and chicken spring roll with peanut butter sauce and pickles paired with Sacred Hill Chardonay. Love everything about it, and i’m not even a fan of lumpia in the first place.

For the main course, they have a deconstructed rawon that is just to die for. Beef Cheeks Rawon Sauce – slow cooked in traditional Eastern Java black nut ‘kluwak’ broth, whipped potato and vegetables, salted duck egg and bean sprout paired with Vina Ventisquero Reserva Pinot Noir. The meat is so tender, yet we can taste the kluwak in each bite. The dish looks so pretty, and not in their ‘usual’ soup form, making it unforgetable. We close the night with an amazing plate of art that is Es Pisang Ijo Makassar. It is a refined form of the makasar pandan banana dumpling, burnt banana, rice flour porridge, vanilla gelato, mango jelly. A perfect ending, indeed.

A dinner as superb as this will set you back to IDR 398,000+ per person. Such a steal for a dinner this caliber. Kudos to the Chefs team and SKAI beach club.
